Cheese Making Class

Feta, Farmer Cheese, and Mozzarella! Cheese making is here and it is going to taste amazing! We will take raw milk and transform it into a delightfully light soft cheese that is excellent as is, or can be spiced up with fruit or herbs to be eaten as a spread for bread or crackers. In another pot we will prepare our cheese curd for a batch of Feta-style cheese. Finally we will stretch out some stringy Mozzarella. What we start the first night, we will finish the second. We will sample three types of cheese and have samples for everyone to take home. YUM! (Please bring a container or plastic zipper bag for your leftovers)

Felted Soap

Wrap soap in alpaca fibers so that your soap is like a washcloth and soap in one! Use can also use the soap you made in Soap Making with Goat's Milk. (Students should bring two bars of soap to this class)

Jam Making

Learn how to make homemade jam with fresh or frozen fruit. Kate teaches food preservation classes for the University of Maine Cooperative Extension for a living. She is the author of two books: Portland Food: The Culinary Capital of Maine, published May of 2014 and Distilled in Maine: A History of Libations, Temperance and Craft Spirits, in July 2015. Her work has appeared in Zest magazine, Down East magazine, Dispatch magazine, The Portland Phoenix, and DigPortland.

Soap Making with Goat's Milk

This soap is amazing-it leaves your skin feeling so smooth and soft! The first night learn how to make the basic soap recipe using raw goat’s milk. The second night we will let our imaginations go wild. Best of all--you get to take several bars home! Wear clothing that you are not afraid to ruin just in case. We will provide safety glasses and gloves
